The process begins with placing the frozen raw material in a refrigerated vacuum system where its gently dehydrated before it can thaw. The ice turns directly into water vapor without passing through the liquid phase. This drying method allows for the superior retention of the food’s color, nutrients, and piece identity.
Drum-drying is a high-quality drying method that results in finished ingredients that are suited for a variety of food, beverage, and dietary supplement applications.
During the drum-drying process, pureed raw ingredients are quickly dried at the lowest possible temperatures over a pair of large, rotating drums, then milled by the sheet into flakes or powders that can be easily and quickly reconstituted. Drum drying retains much of the fresh flavor, color, and nutritional value of the raw ingredients.

To help ensure food safety in our global supply chain we have a risk-based supplier approval program that includes a foreign supplier verification program (FVSP), supplier audits, raw material hazard analysis, and supplier scorecards.
We have an extensive quality and safety testing program that includes our ISO 17025 Research and Analytical Center, an in-house microbiological and physical testing laboratory, and a robust network of external laboratory partners. We also commit to continuously improving our programs and processes by monitoring our performance targets.
